Doesn't that first part of Also Sprach Zarathustra work really well as a prelude to Beethoven's 5th Symphony?

I don't think so. The beginning of the Fifth Symphony is extremely dramatic, with the "hammer blow" theme stated immediately. To lead up to that statement would, I think, drastically weaken the effect. To lead up to it with the introduction to "Also Sprach Zarathustra", which is almost a small piece in itself, would be even worse. The first movement of the Fifth is in sonata allegro form, and to preface it with a theme unrelated to any later development would do violence to the form, and to the composer's intentions.
